Chocolate Chip - Rolo Stuffed - Cookies!
And they taste UH-mazing!!
Heres the how to:
You will need:
1 ½ cups (130g) unsalted butter; softened
1 cup (200g) granulated sugar
1 cup (220g) packed brown sugar
1 tablespoon vanilla
3 3/4 cup (480g) all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
2 cups (200g) semisweet chocolate chips
20-30 Rolos; frozen at least 2 hours
Makes between 20-30 cookies
Pre heat oven to 350°F. In large bowl beat butter, both sugars, vanilla and eggs until light and fluffy. Mix in flour, baking soda and salt. Mix in chocolate chips - I used 200g and that was a LOT, so if you don't like your cookies super chocolate chip-y then just use about 100g. (The original recipe used pecans here too, but I opted not to)
Measure dough in to even balls - about 1.5 tablespoons in size.
Place a frozen Rolo in the centers of the dough balls and form dough back into a ball around the Rolo.
Place Rolo stuffed dough balls into the freezer for 15-20 minutes before baking, so they are nice and firm!
Line a baking sheet with baking/parchment paper or a silicone baking mat if your fancy ;D, place dough balls 2 inches apart.
Bake 11 to 13 minutes or until light brown (centers will be soft). Cool 2 minutes; remove from cookie sheet to cooling rack.
Now eat one while they're still warm and gooey!!
