Bake off!

Hey Guys!

So a few weeks ago I purchased a lovely little mini muffin maker from good ol' Wilkos for the grand price of £5. Yup, I said £5! A-mazing! 

(this is not my mini muffin maker, but its pretty similar!)

So when I spotted these lovelies on Pinterest, I thought I would give the new mini muffin maker a test drive with this recipe!

So yeah, mini muffin maker for the win folks. I also find it quite fun to say 'mini muffin maker'....

You Will Need:

3/4 cup sugar
1 large egg
1 1/2 cups all purpose flour
2 tsp baking power
1/4 tsp salt
1/4 tsp ground nutmeg
1/4 cup vegetable oil
3/4 cup milk (low fat is fine)
1 tsp vanilla extract

mini muffin maker optional ;D

Makes 24 minis or 12 big-uns! 

Preheat oven to 200. Lightly grease a muffin tin with marg or vegetable oil. Or switch on your mini muffin maker and wait for it to heat up! Line with cases.
In a medium bowl, beat together sugar and egg until light in color.
In a separate bowl, whisk together flour, baking powder, salt and nutmeg. Pour into egg mixture and stir to combine. Pour in vegetable oil, milk and vanilla extract. Keep stirring until its all combined.
Divide batter evenly into muffin cups or mini muffin maker cups, filling each about 3/4 full.
Bake for 15-18 minutes for standard-sized muffins or 11-12 minutes for mini muffins in the oven, 10-11 minutes for mini muffin makers or until a tester inserted into the center comes out clean. 
When muffins are done, remove from mini muffin maker, (and cases if you like) and while they're still warm lightly brush the top of each with some melted butter or milk, and roll in sugar. Cool on a wire rack.


 I said 'mini muffin' 12 times in this post.
